Team Stuffing or Team Dressing?

The holidays are just around the corner and this means special and meaningful traditions, amusing times with family and friends, and lots of delicious food.  So, in the spirit of delicious food, I want to share with you a Romero Recipe to help you prepare your holiday feast.  



Apple Cranberry Cornbread Stuffing/Dressing 

(take your pick) 


1 pan of cornbread (9” round or 8”x8” square) Note: It works best to make this a day ahead so that it has time to dry out some  

4 Tbsp extra virgin olive oil  

1 cup diced celery  

1 cup diced sweet onion 

2 large crisp apples, peeled, cored and diced  

1 tsp thyme, dried  

½ tsp ground cinnamon  

1 cup fresh chopped cranberries  

1 cup light vegetable broth – more, as needed  

2 Tbsp pure maple syrup  

Sea salt and fresh pepper, to taste 

Preheat the oven to 325°F. 


Cut your pre-made cornbread into 1” cubes and toast the cornbread cubes for approximately 20 minutes. Keep an eye on them so they don’t get too browned. When they are nicely toasted remove the baking sheet from the oven; set aside to allow the cubes to cool. Raise the oven temperature to 350°F.

Heat 2 tablespoons of the olive oil in a large deep skillet, stir in the thyme, cinnamon; add the celery, onion, and apples; cook until softened. Remove the mixture from the burner and set aside to cool for a bit. Add in the chopped cranberries. Stir in the toasted cornbread. Mix well. Add the remaining 2 tablespoons of olive oil and the broth, pouring a little at a time (until you reach your desired consistency); stir gently to combine. Drizzle the maple syrup over the mixture; gently stir again to combine. Spoon the mixture into a glass baking dish (9”x13”), cover and bake at 350°F till heated through (approximately 20-25 mins). 

Remove from the oven and serve warm.
